11 / 2 cups oatmeal
1 / 2 cup rice flour
1 teaspoon baking powder
1 / 2 teaspoon baking powder
Teaspoon salt 1 / 2
1 tablespoon sugar or honey
Teaspoon 3 / 4 of egg substitute dry mixed with a tablespoon of hot water
1 cup rice milk
1 / 2 teaspoon vinegar

Whisk dryThe ingredients in a bowl. Whisk the wet ingredients in a bowl. Pour the wet into dry. Stir until just mixed. Shape into loaf on a baking sheet coated oval. Sprinkle with oats, if desired.

Bake at 375 degrees for35-45 minutes.

Yield: 1 loaf

Banana "Ice Cream"

2-3 frozen ripe banana
Rice milk 1 / 2-3 / 4 or coconutMilk

Bake at 350 degrees until a selection of wood is inserted into the center comes out clean, about 35 minutes. Run knifeon the edges of the cake. Continue to take a cooling rack against the top of the cake in the pan and return. Carefully remove waxed paper. Cool cake.

"Buttercream" Frosting:

Mix dry ingredients in a bowl. Mix the wet ingredients in a bowl. Stir. Stir in blueberries. Pour into 12 muffin cups lined with standard dimensions. Sprinkle with cinnamon and sugar if desired

Bake at 375 degrees for about 20-22 minutes, or until muffins test done.

Yield: 12 muffins
